I first discovered rhubarb when my parents starting growing it in their yard. I wasn’t too sure I would like it, but that all changed when my mom first made this delectable dessert. It is now a family favorite.
It has also become one of my husbands favorites. He likes it so much that my mom now lets us know when his rhubarb is growing. It is a happy day when we get to take some home to make this dessert.
Strawberry rhubarb crisp is a great dish to take to pot lucks or gatherings with friends and family. It is usually such a huge hit that all I take home is the empty dish. I may have even been tempted to lick my empty bowl on a few occasions…maybe….
Since I’ve made this numerous times now, I have tweaked the original recipe a bit. I also use my own version of the oat topping that I started making with my mixed berry fruit crisp.
Now, the next time you go to the farmers market or the grocery store be sure to snatch up some strawberries and rhubarb to whip up a batch of strawberry rhubarb crisp. Take it to your next pot luck or picnic, just don’t expect to bring any home with you.
