I actually remember this recipe from when my mom used to make them. It’s in our old church cookbook. Do you have any church cookbooks? I grew up in a church that had pot lucks once a month. I still remember the homemade rolls that were always there and all the casseroles. The book reminds me of that. So anyway, back to no bake cookies.
As I mentioned, these are very easy to make and are a great snack. They are not the healthiest cookie but I like to think they are at least sort of healthy since they have oats and protein from the peanut butter. However, there is sugar in there so try not to eat the whole batch at once, that is if you have the will power to only eat one or maybe two.
Of course you could make them healthier by using a sugar substitute and natural peanut butter. You could even try adding other ingredients like ground flax or chia. I will be honest and tell you I have only ever used regular old granulated sugar and peanut butter to make these so I can’t really say how well it would turn out with any variations but it’s worth a try.
Now go whip up a batch of these then grab a glass of milk and sample a few!
