Do you ever have a hard time figuring out what to make for dinner? Maybe you had something planned but it just doesn’t sound good or you are trying to think of something last minute. When I put together this dish the first time I was trying to think of a way to use up some spinach and bell pepper before it went bad. I noticed I had a box of pasta with no intended use and I really didn’t want to do plain ol’ grilled sausage again, so I combined them all and came up with this creamy pasta! I made it again with a different flavor sausage and it turned out equally well.
There many different flavors of chicken sausage so feel free to add whatever veggies you like to the dish. Choose something that you feel will compliment the flavors of your sausage.
So far I have made two variations:
Chopped red pepper and spinach with garlic asiago sausage.
Grape tomatoes and chopped orange and red pepper with chipotle monterey sausage.
