This past Thanksgiving we created a new menu with a lot of dishes we had never tried before. It was fun to try new recipes but it was a lot of work to coordinate so many new and complicated recipes. So for Christmas we are keeping the menu simple with ham and some other simple side dishes. I am also simplifying Christmas breakfast by making this apple oven pancake instead of my usual cinnamon rolls with cream cheese frosting.
Apple oven pancake is something I have often made for dinner when I need to use up some apples. The last time I made it, I decided to add some cinnamon sugar pecans and it was wonderful! My husband even commented that it tasted like apple pie. That’s when I knew it would make a great dish for Christmas breakfast.
